Cupcake fans rejoice, The Copper Carrot Bakery is open in LaGrange
The LaGrange-Troup County Chamber of Commerce celebrated the opening of The Copper Carrot’s second location on Bull Street Tuesday afternoon with a ribbon cutting.
Owner Nikki Franklin cut the ribbon on the fan-favorite bakery to a large crowd looking to appease their sweet tooth. The location is the second shop for Franklin. She and her husband Larry also own a similar bake shop in West Point. Franklin also owns and operates Emberglow, a shop that features handmade artisan goods in downtown LaGrange.
The new location came from listening to customer demand. The idea started on social media where customers said they should open a location in LaGrange, Franklin said.
“I really wasn’t planning on opening a second location, but this building became available and we came over and looked at it. I would say I wasn’t 100 percent ready, but my husband looked at it and he said, ‘I think we should do this,’” Franklin said.
The Copper Carrot offers a wide variety of baked treats from cupcakes and full-sized cakes to cookies, brownies and everything in between. Their specialty is carrot cake, the shop’s namesake, which also happens to be Larry’s favorite.
“We wanted to create a warm and friendly environment and The Copper Carrot was the perfect fit,” Franklin said.
The Copper Carrot also offers custom orders at both locations, though not the first week since they are just getting started.
The bakery is also excited to announce they are offering local deliveries now with their new delivery van.
“We’ll be doing local deliveries within a 30-mile radius,” Franklin said.
Franklin said most of the items in the shop she personally bakes, though Larry does make the homemade banana pudding that was given out at the ribbon cutting.
“We started offering banana pudding on Wednesdays. We call it a banana pudding Wednesday in West Point. We started getting feedback and people were like, ‘You got to have banana pudding here,’ so we will have banana pudding Fridays [in LaGrange],” Franklin said.
Franklin said the LaGrange shop will also be open on Tuesday through Saturday from 10 a.m. to 6 p.m. and Sundays from 1 to 5 p.m.
“We’re excited to be opening here in LaGrange. We are residents of LaGrange, so we’re super excited to be here in the downtown community and we look forward to seeing everyone come out and visit us,” Franklin said.
